Head of Food Metabolome

Research interests:

  • Environmental impacts on food quality and nutritional composition: Investigation of how climate change, environmental conditions, and cultivation practices shape plant and food metabolomes, using advanced mass spectrometry and metabolomics approaches to understand the biochemical responses and their impact on food quality and nutritional value.
  • Plant adaptation, biodiversity, and metabolic resilience: Analysis of metabolic adaptation mechanisms in crops and other plant-based food resources to identify traits that enhance resilience to environmental stress and support sustainable agriculture.
  • Sustainable food systems and nutritional quality: Investigation of how agricultural management, postharvest handling, and storage influence plant quality and bioactive compounds, with the aim to improve resource efficiency, reduce food losses, and enhance the nutritional value of plant-based foods.
