Nutritional profiles of vegetables impacted by genetic, agronomic and environmental factors
Given the current promotion of more plant-based, nutrient-rich diets, secondary plant metabolites draw increased attention. These specialized plant metabolites (SPM) are chemical compounds involved in a broad range of biological functions, including plant responses to abiotic and biotic stresses. Our research focuses on the identification, quantification, and characterization of SPM by means of complementary mass spectrometric methods. We are exploring mechanisms how the accumulation is impacted by genetic, agronomic and environmental factors along the food supply chain and how this knowledge can be used to develop strategies to generate high-quality, plant-based foods.
